Easy Elevated Rice

Want to take your rice up a notch? Here you go.

Serves about 4-6, depending on mug size


1 Onion, chopped
1 Mug Brown Rice (any rice works)
1 Massels Chicken (or Vegetable) Stock Cube
Optional: Toasted sliced almonds, fresh herbs

Add about 2 tbsp olive oil to a medium-large pot with a lid and heat on low-medium. Add onions and saute until translucent
Meanwhile, boil water in the jug
Add stock cubes and mug of rice to pot, give a quick toss to lightly toast the rice
Then add 2 mugfuls of boiling water (so double the amount of rice with boiling water)
Give a quick stir, then pop on the lid and set heat to simmer
Don’t touch it for about 20 minutes, then check the rice and give it a stir, checking every five or so minutes until water is fully absorbed
Top with optional almonds and fresh herbs
