If you haven't already, meet the Mexican version of a toastie.

There are very few dishes that are easier and quicker to make. These make a fantastic snack or main meal and can (and should!) be stuffed with veggies. Bonus healthy points for using whole wheat or spinach tortillas.

Ingredients (to make 1)
1 Tortilla 
Grated Cheese
Vegetables such as spinach, kale, corn, onion, capsicum, tomato
Beans (black or refried)

Heat the sandwich press. (Can also be made in a pan on the stovetop.)
Place cheese and fillings on one half of tortilla, top with a little more cheese, then fold in half.
Place in sandwich press and cook for 1 minute, or until cheese is melted and tortilla is golden. 

To serve: Cut into wedges; top with a squizz of lime if you want to be fancy or some salsa, guacamole or Greek yoghurt (as a sour cream substitute).
