Chicken Noodle Soup with Avocado Toast

Ticks so many nutritional boxes plus the easy and yummy boxes as well.

Ingredients
1 tbsp extra virgin olive oil
1 small brown onion, chopped
1 large chicken breast or 3 boneless thigh fillets, chopped
2 carrots, chopped
2 celery stalks, chopped
3 Massel Chicken Stock Cubes (or homemade stock/broth if you have it) to make 6 cups
1 Bay Leaf
3-4 Fresh Thyme Stems

Method
In a large pot, saute onion in olive oil over low-medium heat until translucent
Meanwhile, boil the jug
Add chicken, carrots and celery to onion, cook 4 more minutes, stirring occasionally; season with large pinch of sea salt
Add stock cubes and 6 cups of boiling water (or other stock/broth option)
Add a bay leaf and fresh thyme stems if you have them
Continue to heat on medium
Add pasta and cook according to directions

For the toast, pick a whole-grain option and slather with avocado and a sprinkle of sea salt

Once pasta is cooked, remove thyme and bay leaf; serve soup with toast
